Description

Anyone else get overwhelmed trying to choose the perfect protein bar? These protein bars are made with clean ingredients that are full of protein, fiber, and healthy fats to elongate the blood sugar curve. No added sugars, artificial flavors, or gums. Feel free to use your favorite nut butter and even add in some chocolate chips.  A perfect snack to fuel you through the afternoon! 

Ingredients

Scale
  • ½ cup almond butter (or cashew butter)
  • ¼ cup honey
  • 1 large egg
  • 1 large egg yolk
  • ½ cup vanilla protein powder 
  • 2 tablespoons seed fiber 
  • 2 tablespoons chia seeds
  • ¼ teaspoon vanilla extract
  • ¼ teaspoon Himalayan sea salt
  • ¼ teaspoon baking soda 

Instructions

Preheat your oven to 325° and grease an 8×8 inch pan with coconut oil. Combine almond butter and honey until soft and creamy. Whisk in the egg and egg yolk. Stir in the protein powder, seed fiber, chia seeds, vanilla extract, sea salt, and baking soda. Combine well.

 

Spoon the mixture into the pan and press out evenly using the back of a spoon. Bake for about 10 minutes. Let cool and then cut into bars. Store in the refrigerator for up to 1 week (they won’t last that long!!).
