Overnight Chia Pudding

  • 1 cup full-fat coconut milk (almond or macadamia milk also work)
  • ¼ cup chia seeds
  • ¼ cup of pureed/mashed blueberries
  • ¼ tsp. vanilla extract
  • Dash of cinnamon
  • sweetener of choice (as desired)
  • 1/4 cup of blueberries as topping


  1. Stir all ingredients in a mason jar, cover, and refrigerate overnight. Top with blueberries before serving.
