These incredible cashew waffles are sure to be a hit! My daughter, Allie, loves waffles! As you can imagine, it isn’t easy to find a recipe that doesn’t spike her blood sugar. These low-carb waffles have become a staple in my house. They are full of protein and healthy fats that will help keep your blood sugar balanced. Just remember to go easy on the berries!  


  • 1 cup raw cashews
  • 3 pasture-raised eggs 
  • 1/3 cup macadamia milk (or any unsweetened nut milk) 
  • 3 tbsp. coconut flour
  • 2 tsp. honey
  • 1 tsp. vanilla extract
  • 3 tbsp. coconut oil
  • 1/4 tsp. Himalayan sea salt
  • 3/4 tsp. baking soda
  • 1 tsp. cinnamon 


Combine all ingredients in a blender or food processor and combine until smooth. Pour batter into a preheated waffle iron. Cook each waffle until golden brown. Top with fresh berries, homemade whipped cream, and additional cinnamon prior to serving! Enjoy!
